Truffle Queso Fundido: A Luxurious Dip for the Firepit
Gettin' Fancy by the Fire: Truffle Oil Queso Fundido for the Win!
This recipe elevates the classic campfire favourite, queso fundido, with a touch of luxury. High-quality cheeses and a hint of truffle oil create a decadent and irresistible dip perfect for sharing around the fire.
Ingredients:
8 oz Gruyere cheese, grated
8 oz Fontina cheese, grated
2 tablespoons unsalted butter
1/4 cup dry white wine
1 jalapeno pepper, seeded and finely chopped (optional)
1 clove garlic, minced
1/4 teaspoon chili powder
Pinch of smoked paprika
Salt and freshly ground black pepper, to taste
Truffle oil, for drizzling
Fresh chives, chopped, for garnish
Tortilla chips, for serving
Step One:
Prepare the Fire: If using an open fire, ensure it has burned down to hot coals. Alternatively, preheat your grill to medium heat.
Step Two
Grate the Cheese: Grate both the Gruyere and Fontina cheese using a box grater or food processor fitted with the grating attachment.
Step Three
Prep the Aromatics: Chop the jalapeño and garlic, combine them with the paprika, chilli powder, salt and pepper.
Step Four
Heat the Skillet: Place a cast iron skillet over the hot coals on the grilling grate or preheated grill. Melt the butter in the skillet over medium heat.
Step Five
Once melted, add the chopped jalapeño, garlic mixture to the skillet. Sauté for 30 seconds, until fragrant.
Step Six
Deglaze with Wine: Pour in the white wine and scrape up any browned bits from the bottom of the skillet with a spatula. Let the wine simmer for a minute,allowing some of the alcohol to cook off.
Step Seven
Cheese Time!: Gradually add the grated cheeses to the skillet a handful at a time, stirring constantly until the cheese melts and becomes smooth and creamy.
Step Eight
Truffle Time: Once the cheese is melted and bubbly, remove the skillet from the heat. Drizzle with a generous amount of truffle oil to your liking.
Step Nine
Garnish & Serve: Garnish with fresh chopped chives. Serve immediately with tortilla chips for dipping.
Tips:
When we can’t find fontina cheese, we have used mozzarella with great success.
Be careful not to overheat the cheese, as it can become grainy.
You can adjust the amount of truffle oil to your desired level of truffle flavour.
Leftover queso fundido can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan over low heat until melted and bubbly, before serving.
