Easy Bee Themed Cupcakes for Your Summer Party
The Curious Bee Cupcake from our Gemini Themed Dinner
2 cups all purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon coarse salt
1/2 teaspoon of ground cinnamon
2 large eggs, room temperature
1/2 a cup granulated sugar
1/4 cup light brown sugar
1/2 cup + 2 tablespoons honey
1/2 cup milk
1/2 a cup vegetable oil
1/2 teaspoon finely grated lemon zest
Icing
five large egg whites
1 cup + 2 tablespoons sugar
Pinch of salt
1 pound butter
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon turmeric
Step One:
Preheat your oven to 375°F and line your muffin tins with paper liners.
Step Two
Whisk together the dry ingredients in a medium bowl: flour, baking soda, baking powder, coarse salt, and cinnamon.
Oh man, the coarse salt is a MUST! It's the secret weapon that takes these cupcakes from good to WOW! Trust me, that sweet-salty combo is magic!
Step Three
In a separate large bowl, use an electric mixer on high speed to beat the eggs and sugars together until they become pale and thick.
Step Four
In another bowl whisk together the honey, milk, oil, and zest.
Step Five
With the mixer on low speed, slowly add the honey mixture to the egg mixture until just combined. Be careful not to over-mix.
Step Six
Divide the batter evenly among the lined muffin cups, filling each cup about three-quarters full.
Bake the cupcakes for 25 minutes, rotating the tins halfway through baking. The cupcakes are done when they are golden brown and a toothpick inserted into the center comes out clean.
Transfer the muffin tins to wire racks and let the cupcakes cool for about 15 minutes before carefully turning them out to cool completely on the wire racks.
Step Seven
Whisk egg whites, sugar, and salt: In a heatproof bowl over simmering water, whisk by hand until warm and sugar dissolves (about 10 minutes).
Step Eight
Whip meringue: Attach whisk to stand mixer and gradually increase speed to medium-high. Whip until stiff peaks form and mixture cools completely (bottom of bowl should be cool to the touch).
Step Nine
Beat in butter and vanilla: Gradually add softened butter on medium speed, then whisk in vanilla.
Add small pieces of the butter and allow the butter to be fully incorporated before adding the next piece.
Step Ten
Smooth frosting: Switch to paddle attachment and beat on low until air bubbles disappear. Scrape sides and continue beating until smooth.
Step Eleven
Now comes the fun part! Grab your piping bag, loaded with that dreamy icing, and a drop flower tip that's ready to bloom. Pop a dollop of icing on that perfectly cooled cupcake, and then unleash your inner flower power! Dab those cute little flowers all around the cupcake, one by one, until it's a beautiful bee-worthy masterpiece!
