6 (150g/5oz) cod fillets, skinless, boneless
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. extra virgin olive oil
White Wine Sauce:
1 small shallot, finely chopped
1 1/4 cups dry white wine
1 tsp. lemon juice
1 tsp. white wine vinegar
1/8 tsp. salt
1 pinch pepper
1 pinch white sugar
1 cup whipping cream
2 tbsp. butter
Process
Cook Fish:
Preheat oven to 120°F (49°C) with a rack over a tray.
Season cod fillets with salt and pepper.
Heat olive oil in a large non-stick skillet over medium-high heat.
Cook fish in two batches for 4 minutes on each side, or until the internal temperature reaches 131°F (55°C).
Place cooked fish in the oven to keep warm.
White Wine Sauce:
In the same skillet, remove excess oil.
Add shallot, white wine, lemon juice, vinegar, salt, pepper, and sugar.
Bring to a simmer and reduce by half (about 3 minutes).
Add cream and simmer for 2 minutes.
Turn heat to low. Gradually add cold butter one cube at a time, stirring with a wooden spoon until the sauce thickens and becomes glossy.
Place the cooked fish back into the pan with the sauce.
Spoon sauce over the fish and let it sit for 30 seconds.
