They're packed with wholesome ingredients like oats, hemp seeds, and fruit, but they still manage to be mouthwateringly delicious. Truly too delicious to be healthy, they're a delightful surprise for your taste buds.
The Eat Me! Oatmeal Bites Recipe: A Step-by-Step Guide
Ingredients
2 1/2 cups quick cooking oats
1/4 cup hemp seeds
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 tsp ground cinnamon
1/4 tsp cardamon
2 large eggs
1 cup coconut milk - or any milk or milk substitute
1/4 cup honey or maple syrup or agave syrup
1/4 cup avocado oil - or vegetable oil
1 teaspoon vanilla extract
3 tablespoons chopped pecans or any nut or seed of choice
3 tablespoons shredded unsweetened coconut
24 cherries - pitted
Directions
Preheat oven to 350°F. Grease a muffin tin.
Whisk together dry ingredients: oats, hemp, baking powder, salt, coconut, pecans, cinnamon, and cardamon.
In a separate bowl, whisk wet ingredients: eggs, coconut milk, honey, oil, and vanilla.
Add 2 cherries to each muffin opening
Fill muffin tins 3/4 full with dry ingredients on top of the cherries
Evenly ladle the wet ingredients onto the dry ingredients.
Bake for 20-25 minutes until golden brown.
Cool in the pan for 10-15 minutes, then transfer to a wire rack.
Serve with a lightly sweetened whipping cream or greek yogurt
Tips & Substitutions
Make it your own! Don't have pecans? Walnuts, almonds, or even sunflower seeds would be delightful substitutes. Not a fan of cherries? Dried cranberries, blueberries, or chopped apple would be equally delicious.
Dietary restrictions? No problem! These can be made with organic and gluten free sprouted oatmeal, a milk substitute, and the honey can be replaced with maple syrup or agave nectar.
For a richer flavour, use brown sugar instead of honey or maple syrup.
Want a little extra protein? Add a scoop of your favourite protein powder to the wet ingredients.
Don't have muffin tins? No worries! These bites can also be baked in a 9X13 baking dish.
